Winemaking Notes – Hand-picked and whole bunch pressed Pinot Noir from Gibbo’s high, cool Piccadilly Valley Vineyard, Adelaide Hills.Pét-nat (Pétillant-naturel) uses nature’s own agenda to create a dry sparkling wine, of rustic deliciousness and texture. Note: ‘Pét-nat’ is short for ‘pétillant-naturel.’ Also known as ‘méthode ancestrale’ where the wine is bottled before primary fermentation is finished.
